I am sharing with you my recipe for Tzatziki Sauce, since a few people asked about it on Sunday. Hope you like it :)
Tzatziki Sauce
Ingredients:
2 cucumbers
2 (8 ounce) containers plain yogurt
2 tablespoons olive oil
1/2 lemon, juiced
3 cloves garlic, peeled (optional)
Salt and pepper to taste
Directions:
With a cheese grater, grate the whole cucumber (including skin) into a strainer - squeeze the excess water out of the cucumber with your hands. In a large bowl, combine the yogurt, olive oil, lemon juice, and garlic. Add the cucumber and mix together; add salt and pepper to taste.
To make a Pita sandwich, spread the tzatziki sauce over the pita and add a salad mix, cucumbers, feta cheese, dried cranberries, walnuts and grilled chicken. Yummy!
Sounds good! I should find out if my husband likes Greek food... :-)
